Tschechische Küche / Czech Cuisine

Jedes Mal, wenn ich in der Heimat Tschechien Urlaub mache, esse ich mindestens einmal Smažený sýr = gebratenen Käse, am liebsten mit normalen Kartoffeln und auf jeden Fall mit Tartarsauce. Zu Hause mache ich dieses Gericht sehr selten, habe es aber für dieses Wochenende auch meinem Mann zuliebe eingeplant. Es war köstlich.

Tartarsauce gehört in Tschechien zu vielen Gerichten und es gibt gute fertige Saucen zu kaufen. Hier in Deutschland gab es eine zeitlang Tartarsauce von Unox, sie fand wohl relativ wenig Anhänger und wurde nach einigen wenigen Monaten wieder aus dem Verkehr gezogen. Ich mache sie immer selbst:

Eine kleine Zwiebel, ein paar Gewürzgurken (ein oder zwei kleine), Zitronensaft, Salz, Pfeffer und Mayonnaise. Alles zusammen pürieren und fertig.

In Tschechien gehört Smažený sýr auf jede Speisekarte, zudem es fast immer das günstigste Gericht und eines der Topangebote für Vegetarier ist. Aber der Käse, der dort verwendet wird, läßt zu wünschen übrig. Ich nehme hier immer mittelalten Gouda, den ich gleich an der Käsetheke in 1 bis 1,5 cm dicke Scheiben schneiden lasse. Dann paniere ich ihn, brate ihn kurz von beiden Seiten in der Pfanne an und fertig.

Am liebsten esse ich einfache Salzkartoffeln dazu, seltener Kartoffelspalten oder Pommes Frites. Bei den Kartoffelspalten habe ich die Erfahrung gemacht, dass diese einfach in die Friteuse geschmissen werden. Ich mache Kartoffelspalten grundsätzlich nur im Ofen.

So, jetzt genehmige ich mir erstmal einen kleinen Slivovic, denn der Käse liegt schwer im Magen :-) Und hier das ganze nochmal in Bildern:

Whenever I'm on holidays in my home country, the Czech Republic, I eat Smazeny Syr = fried cheese at least once, preferably with potatoes and in any case with tartar sauce. At home, I seldom cook this meal but I have planned to cook it this weekend, both for me and my man. It was delicious.

Tartar sauce is available with many meals in the Czech Republic and there are some good ready made sauces on the market. There used to be a good tartar sauce by Unox here in Germany but it was obviously not very popular and disappeared from the shops again after some time. I always make my own:

A small onion, some gherkins (one or two small ones), lemon juice, salt, pepper and mayonnaise. Mix and puree everything together.

You can find Smažený sýr on every menu in the Czech Republic because it is almost always one of the cheapest meals and of course the top offer for vegetarians. I don't much like the cheese that's used there. I always buy middle-aged gouda and have it cut in 1 to 1,5 cm thick slices at the cheese counter. I then coat it in bread crumbs (first flour, then egg, then bread crumbs!) and fry both sides of the slices in a frying pan and that's it.

I love eating it with simple cooked potatoes, seldom potato wedges or even french fries. I've made the experience that the wedges are simply thrown into a chip pan. I always make them in the oven.

Anyway, I'm off to get myself a small slivovic because the cheese is kind of heavy in my stomach. And here's the story in pictures:

    Na egal, Hauptsache, es schmeckt fantastisch! :-)

    Liona: ja, die Sauce ist Remoulade, heißt aber seit je her Tartarsauce. Und schmeckt!

  6. ich wohne eine stunde von der grenze entfernt und manschmal rafft es mich einfach und ich muss rüber fahren und "Smažený sýr" essen! :)
    Seit jahren mein abseloutes lieblingsgericht was mir in deutschland leider noch nie begegnet ist, werd aber auf jedenfall dein rezept ausprobieren! dankeschön! (:
